In Catalog->Products->Options I have not found any setting that reduces the number of decimals in the price (percentage or fixed amount) and weight attributes.
How can I do this?

On the front-end side, it is default by 2. If you want to change that at price on the front-end side, please go to EShop -> Sysstem -> Currencies to edit available currency, then you will see.
Thank you very much Giang for your reply, the setting you suggested does not change the decimals of the percentage in the purchase options, (the value that appears in brackets when you select a purchase option)
