I'm currently trying to correct an issue on an eshop site where tax is causing confusion.
- The Product Category page shows the price including tax which is correct.
- The Product Details page shows the price without tax
Solution:
Check through all the aspects of the documentation:

(documentation needs some slight updates for 3.9.5 and Joomla 4/5 screenshots).
In this case the tax rate was not properly applied to all the products, only some. So reapplying the tax to all products then resolved the issue.
There's a shortcut to changing the tax rates in bulk.

- Components > EShop
- System > Tax Classes
- Click on the Tax Class name
- Scroll down to Assign to Products
- At the bottom of the Products List, click on the space at the bottom to activate the selector, and choose "-- All Products --" and then save the Tax Class. That will now apply the tax rate to every product.
