out of stock settings

How can I disable to put in the cart more products than the quantity which is really in stock?
I want to show all products, also the not in stock ones, but I don't want people to add out of stock prodycts in cart and also not more than the available quantity in stock peaces in cart. I want to allowed them to put the in the wishlist if they want

In the shop configuration System settings, Option tab, scroll down to Inventory and set Stock Checkout to No, and Hide Out of Stock Items to No. This will allow the items to be seen but not able to be added to the cart.

This is a global setting that can also be done on each individual stock item on the Inventory tab if you want to make it different for some products.
