1. Yes, EShop supports both of Guest and Registered User checkout types. You can configure to use one or both of them at the same time.

2. Yes, you can customize the checkout fields by using Custom Fields feature in EShop. Please read more about it here: eshopdocs.joomservices.com/sales/fields

3. Yes, EShop checkout is one page checkout.
