How to modify the 'Quote Form'

Hello, it is my first time to use eshop.
However, my goal of using this powerful tool is to able to let customer to generate their own quotation and send to their own email address.

According to my exploration, the built-in quote form function is really cool and fulfill my need. But all i want is that the email address is able to input by the customer but not the e-shop owner. Can anybody help??
