Hello Matt,
EShop allows you to have different images sizes on different pages (products list, product details page, cart page, checkout page, etc) by putting them under EShop -> System -> Configuration -> Image tab. The system will resize images to the corresponding sizes when you are viewing product on the front-end side.
You should enter the image sizes with same ratio.
