How to change email received after order is made

I want to change some of the text in the email.

Specifically, "Thank you for your interest in New Paradigm Coaching products. Your order has been received and will be processed once payment has been confirmed."

It is confusing my customers since when they receive the email the payment has gone through already and it has been confirmed, and their download is available. (all products are downloads so any perceived delay is not good)

Where do I find that?

You should go to EShop -> System -> Messages to find the email content and edit them from there.
