After I upgraded to version 1.3.9.
[PAYMENT_TELEPHONE] no longer shows the email address on the customer email, admin email or order view.

[PAYMENT_TELEPHONE] is for telephone offcourse and not for email  Insert [PAYMENT_TELEPHONE] and [PAYMENT_EMAIL] in System > Configuration > Layout > Payment Address Format and delete from notification templates

That's OK Davide!
The version 1.4.0 is also released, you can also download and upgrade it to have the custom fields works more flexible.
Sincerely, Giang
