It is possible to force the costumer for a specified phone number format? I need xx-xxxxxxx so two numbers than 7 or 6 numbers and and the dash would be also necessary.

Please go to EShop->Sales, then click on telephone field, you should be able to edit the validation rule of telephone field there.
