Yes of course,
Go to System -> Configuration -> Image tab. You will see.
1. There are 3 Image Size Functions there. You can choose one of them, default is Resize Image function. Explanations of each function is also showed there.
2. EShop allow you to enter different image sizes on different pages. You can enter them there.
They are all clear!
