EShop allow you to add un-limited extra fields (options) for each products. Extra fields types include: Select list, Radio list, Checkbox list, Text, Textarea, File, Date and Datetime. You can see them on the product detail page on my demo site here:

Also, EShop supports attributes for each products, so you can also add many attributes for your products easily.
Options, Attributes can be also imported from CSV file.
