Hi,
I cannot find any documentation about importing categories through CSV. About the fields ect. 
Can anyone help me?

We wanted to let you know that we are currently improving the "Import Categories via CSV" feature. In the next Edocman release, you will find this function simpler, easier to use, and with a more attractive interface.
