I send you the Document modification file for you. Please extract the zip file and copy to overwrite file: edit.php into directory:

Please remember to select No at field: Use simple front-end upload form in Configuration page of Edocmanroot > components > com_edocman > view > document > tmpl

I'm using templates overrides, so I think I must copy edit.php file in /templates/template_name/html/com_edocman/document folder, and redo my changes in the new file, is that correct?

You can copy that file to directory:
root > templates > your_current_using_template > html > com_edocman > document directory
