There is an option to insert the category into the article with the plugin using {dmscategory ID_OF_CATEGORY}. Is there an option to insert just one or two documents into an article?

Unfortunately, we don't have plugin to display individual document inside an article.

How much would it cost to write one? Also, the {dmscategory ID_OF_CATEGORY} doesn't appear to be working in an article.

It will cost you 40$ for the plugin. For issue with dmscategory plugin, if it's needed, you can submit a support ticket so that we can check it
