I've just purchased the Documents Seller extension and I am trying to set it up. I have a question regarding the Paypal payment plugin.
I see where I would need to change the e-mail to my paypal email address (That the field comes populated with your email address I find a bit suspicious), but how does the extension then verify the payment before sending out a download link? Shouldn't there be a field where I need to place a token from my paypal account?

=> I am sorry. I will change the email to leave it empty (Although I think there is no problem with it because the payment plugin is in Test Mode by default) .
=> After Users complete the payment, Paypal will notify the system about it. The system then have a function in the paypal payment plugin to verify that payment. If the payment is valid, then the document will be sent to customers email. If it doesn't , then no document are sent to them. You can check the file components/com_dms/payments/os_paypal.php to see how Payment is verified . No need to enter your token !
