How possible is it to add YOCO to the list of plugins available for Eshop and EventsBooking?

They're one of the top ranking payment gateways in South Africa (other than PayFast)

No. Sorry... And from what I can see on their payments extensions list, they haven't developed a YOCO plugin yet.
