PAyment plugin by category (or even item)

Hi folks,
I have a need to associate offline payments to specific categories.
Currently I use 2 payment types, Stripe and Offline, and of course both of these appear in the checkout page.
For certain categories though, I want to have only the offline paymant to be available.

If it cannot be done by category... maybe by item (though this would involve more maintenance for the user).

is there any way I can do this,....... (maybe custom work on the offline plugin, which would be no problem).

I am a bit confused about the your requirement. If customer orders products from all categories, then which payment method will be displayed?

I see what you mean, and it is a very good point.

Say I have 4 Categories of product, Cat "A", "B", "C" and the 'special' category of "D".
I have 2 payment methods, "Stripe" and "Offline"....
Stripe applies to Categories, A, B and C only
Offline applies to all categories, A, B, C and D

So, for example,
If the order contains only products from Cat A, B or C, then both payment methods are available.
If the order contains any products from Cat D,(even if there are other category (A,B,C) products on the order), then only the 'Offline' payment method is available.
So, any order with Category "D", only has one payment method.

I hope this requirement is not too difficult.....
