EShop support default theme. If you can use Default theme, then you don't need to use any other themes of EShop. Default theme is the theme that you are seeing on EShop demo at eshop.joomdonation.org/

what dave is asking is, can you delete the default Eshop theme and just use the styling of the joomla template?

how i understand it is that Eshop requires a theme to be installed for eshop to function.

We must not delete default theme in EShop because we need atleast a theme to show eshop component. It is not related to joomla template.
