custom field set to not required show field tag in email was created by Mark
We have set the field [ADDRESS] as not required
If the User doesn't enter any text in this field then the email message show the tag name eg [ADDRESS]
I would expect as the user didn't enter a value then a blank would be show in the email not the field code name

Hi Mark
That's strange. If users does not enter data, the tag should be replaced with empty string. If it shows [ADDRESS], something is wrong. You can submit a support ticket sending us super admin account and tell us step by step what we need to do to see the error
We are going to check to see why the issue happens and get it sorted
