In the configuration settings you set the email address for all emails going out ie admin@acme.com. (seen screenshot) So emails and responses go to this address.
Many organisations have multiple event organisers who manage events.
When an organiser sends out a mass email to participants it goes out with the default address in this case admin@acme.com. So when they sound out an email they can't see the responses unless they have access to to the default address.
It would be nice if the organiser could override the default address with their own so they could see the responses.

Agreed +1

Or at least set a reply-to address on an event by event basis.

Actually, From Name and From Email can be set per event already. Edit the event, look at Advanced Settings tab, you should see From Name and From Email settings.

Yes you can set email address and name in advanced settings, but this means manually entering email address twice and name in every event they set up. This is time consuming and prone to errors (ie incorrect email address).
Also this function is not available in Front End Submission

A much better option would be to set in configuration
Mail Settings Enable Yes/No
From Default/Organiser
If set to Default then use the Email address in Configuration
if Organiser emails go out with Organiser's email address and Name
