The calendar is rendered by Joomla core API, so it could not be changed
I just looked at the code, the First Day is controlled by metadata of your language. So the question here is what language you are using on the site? Maybe you can change that from there

The site is multilingual, 5 languages in total. I have checked the behavior of the calendar in each language and it works correctly except in the language of my region, Català language (ca-ES), which is the most used on the web.
Joomla's multi-language is correctly configured with all the languages installed, but I can't find a way for the week to start on Monday in Catalan.
It is important for my client to be able to solve this problem, I need your help.

Please check the language folder of your language to see if there is a file called langmetadata.xml.
If that file is available, open that file, check <firstDay>0</firstDay>. Change 0 to 1 would work
