Alan,
What Tuan described is exactly right. The different plugins are just used to make the payment method clear to the user. It also helps us understand the number of members who pay by each method.

Maybe in the next release, we can improve it so that each offline payment plugin can have it own offline payment methods instead of sharing the same messages like how it is at the moment

Ah, thanks, Tuan. I explain the different methods in the email, including a link to a downloadable SO form and that seems to be working. However, your solution of having additional payment plugins does seem like a better idea. I know you provided them above, but there was a problem that Dang Thuc Dam sorted out. Can you make these plugins generally available for everyone to use?
One further question though: we have two basic plans: one for one year only and one for a recurring payment. When someone pays offline and sends us a SO, they should have selected the recurring plan. We've now had our first year and some of these have now expired, but it could be that payment has just been delayed and the SO payment may appear in our bank account in a few days (then the Treasurer has to note these and let me know). Meanwhile, these subscriptions are not active. The only way around this I can see is to make SO payments Lifetime so that they don't expire - if we don't receive payment through the SO within, say, a few weeks, we can then expire the subscription manually.
Is there a better way to do this? Has anyone else found a better way?

I'd still like to know how others handle Standing orders, but the following might be helpful.
If I decide to change all SO subscriptions to Lifetime membership as I suggested in my last comment, I wondered how I could do this: I can change the SO plan to Lifetime but I wasn't sure if this change would automatically be reflected in existing subscriptions or whether I'd need to go through them manually and change the subscription end date (although there is no way to change it to Lifetime - just a date well in the future).
However, if I change the SO plan to Lifetime, this automatically changes the individual subscriptions to Lifetime so this is an easy change!

I had changed all the Standing Order subscribers to Lifetime - I had to do this manually this time: I'm not sure if they would have chenged automatically after I had changed the plan as they appeared to do when I tested it, but I changed them all manually.
However, having now got a list of those who have just paid by SO from the Treasurer, I can see a problem with this method. I have no way to record the fact that they have renewed. Their subscription shows as currently active. If I select the subscribers whose SO payment has been received and click on the 'Renew Subscription' button, a duplicate subscription record is created, leaving the original as Active. If I make the old one Expired, it sends out an email to the subscriber that tells them their subscription is about to expire (and I had modified the plan text to say they don't need to do anything as they are paying by SO.
I'm really not sure whether there is a correct way to deal with this or even what the best workaround is - anyone any ideas or suggestions?

I would need two offline payments:
- bank transfer
- bill
I use os_offline for payment "bill". But how can I set up "bank transfer?
