Start date and end date of publication for the individual product options

Hello,
Could you please enter the start date and end date of publication for the individual product options?
I have a client who has a nursery.
This modification would be very useful as it has plants i with 2 options:
1. with pot
2. only the plant.

Option 2 is only available for a specific period. My client would like to automate the publication of the 2nd option by entering the start and end date.
