I'd love to see the following features added…
1) The ability to create custom category & product page templates and select them from within the category & product admin forms. This is a great feature of VirtueMart, even though VM is otherwise a buggy mess.
2) Another great feature of VM is child products. We could accomplish this in EShop simply by allowing product options to be displayed as a list with quantity boxes like this…

Even better would be to allow displaying products + options on the category page. An example of one we've done can be seen at

although this page takes it even further as this is a category page that shows all products + child products + options.
