I would enter the following CSS code in media/com_eventbooking/assets/css/custom.css (if it doesn't work in there, add it to your site template's main or custom .css file).
Sample:
The "!important" might not be needed, so you can try to remove it and see it the code still takes effect.

.eb-event-list a.eb-colorbox-map {color:#FFF !important;}
