In the Admin Quote Email Available Tags: dosnt containds Zip code, city, and many others, where can I find this?

Thank you for submitting the question here. The Quote Form does not support that field so the Admin Quote Email does not supports that field.

You can enable/disable all of supported fields of quote form under EShop -> System -> Configuration -> Layout tab, look at "Quote Form Fields".
