optional fields still display "required" popup

Fields that I have marked as NOT required still display a red popup tooltip when skipped, and also, some display an asterisk.

I played around a bit, and disabled the popup by deleting [required] in the validation field, but I can't disable the email requirement.
Also, is there a way to change the text of the gateway fee item?

=> Could you please let me know more details about it ? What's gateway fee item ? If I understand correctly, you can go to Joom Donation -> Translation, find the language item JD_ONLINE_DONATION and change the text to meet your need
